Chunks of lard are massaged repeatedly with rock salt and a blend of fresh spices and aromas. Our master butchers repeat these operations over and over until the meat achieves the balanced flavor that distinguishes this specialty. Pressed together, the slices of lard are wrapped in natural casing that protects them during the long aging process. It is during this extended period, without rushing, that the rolled lard develops intense aromas and unique flavor notes. Also available:

• With truffle flakes.
• Spicy, seasoned with paprika and chili.
