PANCETTA REGINELLA

For this specialty, only scotennata pancetta from our master butchers is used.

Salted using the ancient dry-salting method, it is bound between two solid wooden boards that release or absorb moisture during the long aging process. The boards are removed at the end of aging, along with the casing, making it ready for slicing.
