The lean and tender pancetta is combined with the robust flavor of Veneto Casalina sopressa.

The process involves trimming the meat to remove excess fat. It is hand-salted with sea salt and flavored with aromatic herbs and spices. The pancetta is rolled and filled with fresh sopressa paste. Enclosed in natural casing, it is left to age slowly to blend and harmonize the typical aromas and flavors of both pancetta and sopressa.
