For years, an ancient family recipe has been used, which involves the use of the noblest cuts of pork, such as the thigh, and fresh garlic.

After selecting the meat, it is meticulously trimmed by hand and processed with local, natural spices and herbs. Encased in natural casing, it is left to dry naturally, benefiting from the air currents coming from Mount Grappa.
